Ingredients for 1 serving:

  • 200 g cherry tomatoes
  • 1⁄2 pepper, red (approx. 70 g)
  • 200 g asparagus, green (without ends)
  • 7 leaves basil, fresh
  • 20 g olives, black
  • 150 g chicken breast fillet
  • 20 g ham, smoked
  • 1 tsp rapeseed oil
  • 50 ml white wine, dry
  • Pepper
  • Salt

Preparation:

  1. Halve the cherry tomatoes and place in a bowl.
    • 200 g cherry tomatoes
  2. **Circa approx. 2-3 cm** off the end of the asparagus. Place the asparagus on a plate.
    Season the chicken breast fillet with salt and pepper.
    • 200 g asparagus, green (without ends)
    • 150 g chicken breast fillet
    • Salt
    • Pepper
  3. Preheat the oven to **60 °C top/bottom heat**.
  4. Heat the rapeseed oil in a non-stick pan over medium heat. Add the chicken breast fillet, asparagus and ham to the pan and fry, turning occasionally, for **about 10 minutes** until the chicken is cooked through and the ham is crispy brown.
    • 1 tsp rapeseed oil
    • 20 g ham, smoked
  5. Put the asparagus, chicken and ham on a plate and place in the preheated oven.
  6. Add the cherry tomatoes, olives, basil and wine to the pan and reduce over a low heat for **approx. 5-7min**.
    • 20 g olives, black
    • 7 leaves basil, fresh
    • 50 ml white wine, dry
  7. Season the tomato and white wine sauce with salt and pepper. Remove the plate with chicken, asparagus and ham from the oven and top with the sauce.
