Marinating pork fillet – this is how it’s done
There are many different ways to marinate pork. For our recipe you need the following ingredients:
- 500 g pork fillet
- Rapeseed oil
- Dried thyme
- Salt, pepper
- Meat stock
- Fresh thyme sprigs
- Sauce thickener
Step by step – this is how it works
The first step is to wash the meat thoroughly. Then pat it dry and parcel it. Mix additional pepper with 3 tablespoons of oil and thyme.
Now rub the pork fillet on all sides with the marinade and wrap it in foil. Then it goes into the fridge for at least an hour, although it is even recommended to put the meat in the fridge overnight so that the marinade is ideally absorbed.
Then heat some oil in a pan so that you can sear the meat nicely on all sides. During this time, make 0.25 litres of meat stock and add the thyme sprigs. Add this liquid to the pan, which is then placed in the oven. The meat can now be left to cook in the oven at 200 degrees Celsius for 20 minutes.
Remove the meat from the oven and roll it up in foil. Remove the thyme and add 3 tablespoons of cream to the roast stock. Thicken with a little sauce thickener and season to taste.
The meat can now be served, for example, sliced or in one piece.
In addition to the delicious sauce, boiled potatoes with broccoli or other vegetables go perfectly with it.
